The cuisine of Laurent and Isabelle Miremont draws its inspiration from the products of the Basque Country and the fishing of the nearby Adour.

“Go meet local producers and talk with them about their daily lives, their passion for their products, their profession in all simplicity.

This is the origin of my cooking, entirely focused on the product. A cuisine where the menu is developed according to the seasons, encounters and discoveries, almost on the spot”.
